Zucchini in a mini cup or what to do with one zucchini

Saw this recipe a few days ago, and I just had to make it, there was something so precious about it, and I love zucchini and onion and eggs, anything added to that would be awesome and cheese, always one of the best adds. These things are little creamy on the inside and slightly crunchy on the outside, altogether goodness, and making them, so fast so very fast, chopping a quarter of onion, and grating a zucchini, the one vegetable that truly loves being grated. 

1 zucchini, grated 
1 egg
¼ of an onion, chopped
¼ cup shredded spicy jack
¼ cup panko breadcrumbs
salt and pepper

Grate the zucchini into a paper towel, then squeeze out additional liquid, and discard, (I do this over the sink). Add the zucchini to a bowl and mix in chopped onion, egg, cheese, panko, salt and pepper. 

Spray a mini cupcake sheet with olive oil spray, (one thing to note this makes 12 mini cupcakes, so if you have the large tray, it's onlu half. 
Pack the mixture into the cups, really make sure their packed in tight. 


Bake at 400 for 18 minutes, my oven is not hot enough so I did 425 for 19 minutes. 
And look mini zucchini cups perfection. They're a little bit spicy because of the spicy jack, the original recipe calls for cheddar, but I really only keep one shredded cheese in stock, use what you like best, I think parm would be great as well.
