Orzo spinach pasta salad, zombie version of a vegan meal

Zombie vegans? Yup. How? Pasta. Oooooh. 

This is my grandmother's go to vegan recipe. and every zombie should cook at least one thing their grandmother makes, right? Especially if it's probably the easiest thing.

Orzo Spinach Salad

Vegan Orzo Spinach Pasta Salad

1/2 pkg orzo  (around 1 cup)
1 bunch baby spinach
2 clove garlic, sliced
1/3 cup pine nuts
2 tsp dried mint
2 tbsp lemon juice
3 tbsp olive oil
salt
red pepper

Bring a pot of salty water to boil
Add orzo and garlic and cook to instruction
Place spinach in colander.
Pour orzo on top of spinach, return to the pot and add oil, mint, and lemon
Meanwhile toast pine nuts on a bit of foil in the toaster oven (foil means no clean up)
Add the nuts and season to taste. Add more oil, if it's a little dry.
